Don't bother unless you are willing to have sex with most people and do all standard things. You can say no if someone makes you feel unsafe or you have a good reason. You can say no to weird stuff. But if you don't want to see say, a very large 65 year old man or then you're going to need a second job.
You also should be comfortable offering things like kissing, fingering etc. You can screen who you choose to see, you can not kiss. Lots of girls don't do this and that. But if you want to make a living you need to be prepared to do these things. I work in a brothel and I see girls refusing to kiss or turning down guys just because they don't like the idea.
